- 500g chicken thighs, cut into pieces
- 1/2 cup yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp garam masala

- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1/4 cup mint leaves, chopped
- 1/4 cup coriander leaves, chopped
- 1 tsp cumin seeds
- 2 tbsp biryani masala
- 1/2 cup fried onions (optional, for garnish)
- Saffron threads soaked in 2 tbsp warm milk (optional, for color and flavor)
- Ghee or oil for cooking
Instructions:

Cook the Rice:
- Rinse the basmati rice under cold water until the water runs clear.
- In a large pot, bring water to a boil. Add cardamom, bay leaf, cinnamon stick, and a pinch of salt.
- Add the rice and cook until it’s about 70% done. The grains should still have a bite to them.
- Drain the rice and set aside.
